Clootie Dumpling

I don’t have one definitive recipe for clootie dumpling, there are many to be found. Here, however, is my Gran’s, written in her handwriting.

6 cups SR Flour, 1 Cup brown sugar, 1 cup white sugar, 1 teaspoon salt, 1 teasp baking powder, 6 oz suet, 1 large teasp of mixed spice, 1 large teasp ground ginger, 1 large teasp ground cinnamon, 1 grated apple, 1 grated carrot, 12 oz mixed fruit, ½ lb seedless raisins, 1 tablespoon treacle, 1 egg, 1 tbsp syrup, Cold tea to mix

Mix all the ingredients. Prepare the cloot by first soaking in boiling water and then dusting liberally with flour. Pour the dumpling mixture into the cloot and then tie up leaving room for it to expand.

Steam in a large pot, checking regularly that it doesnt go dry. Top up with BOILING water if required.

TBH I’ve no idea how long this needs to cook for – several hours really. As long as it doesn’t boil dry it wont matter!! Test after a couple of hours using a metal skewer or similar and keep cooking if it comes out soggy 🤣
